Chile Verde

My friend Dan made this at work and it was delicious! Thanks for sharing the recipe Dan!
3 lbs pork loin (cubed and browned)
6 crushed garlic cloves
6 anaheim peppers (large)
10 tomatillos
1 small onion
2 fresh jalapenos
1/2 bunch cilantro
2 cans green enchilada sauce (El Pato is good)
2 Tbsp Chicken bouillon (knorrs is good)
6 cups water or chicken stock
Brown Pork in oil. Add salt and pepper to taste. You can add garlic powder, cumin, paprika, whatever to make pork taste good.
Deseed chilis and jalapenos chop chilis onions tomatillos garlic
-puree in blender w/ all remaining ingredients
Add pork to mixture.
Simmer covered on low for 3 hours. Add cornstarch to thicken.
Serve with crushed torillas (for your family) sour cream and chopped avacado.

Mini Quiches (Crustless)

I struggle with finding things that I can eat. I used regular sized muffin tins and doubled the cooking time. They were delicious!!!
8 Eggs
¼ c water (milk or other liquid)
3/4c diced bell pepper
¼ c diced onion
1 cup thawed drained frozen spinach
5 drops Tabasco sauce
½ t Cajun spice blend
2 cups shredded cheese (4 cheese blend)
Beat the eggs and liquid together, add spices and vegetables making sure everything is well mixed then incorporate the cheese.
Spoon mixture into mini muffin cups, taking care not to over fill them as they will rise slightly during baking.
Bake for about 10 min
You can make this in any size pan, you just need to increase the baking time. It generally takes 45 min for a pie size pan.
Serve immediately or allow to cool and store in the Fridge for about a week. You can also reheat them in the microwave.
WARNING: I made this and ate it for every meal one day, then calculated the calories. It would probably be best made with mini muffins. Regular mufiins are 210 a piece. (3 is WAY over my maximum of 500 calories)

Curry Pork
Calling this a curry is very speculative. I am kind of a curry snob. Generally I won't eat ANY curry with curry powder. I had this recipe at a potluck at work. It was really good...then I found out it had curry powder in it. I guess there are exceptions to every rule.
1 small pork roast (salted peppered and cooked in a slow cooker till it falls apart)
approximately 1 c. soft cooked lentils (I use the dried lentils and cook them about 55 minutes)
2 cans diced green chiles
approximately 1 c. plain greek yogurt
curry powder
salt and pepper to taste
This recipe really depends on the size of pork roast you cook. I add more or less lentils, yogurt and curry powder depending. I just keep adding until it tastes right. You add enough yogurt to mix everything well together, but not so much that it's soggy. mix everything together and enjoy. If you are feeding it to your family, it goes well with rice.
Korean Lettuce Wraps
1 lb ground lowfat meat (I use bison, but ground turkey, chicken or beef will work)
approx 1/4 c. chopped onion
2 green onion sliced (the green part too)
1 can water chestnuts
1 cup matchstick carrots (cooked)
hoisen sauce
Worcestershire sauce
soy sauce
1 head lettuce
in a skillet brown meat and 1/4 cup of onions until the meat is cooked and onions are clear. Drain water sliced water chestnuts (rinse and drain again). Slice into slices and add to meat mixture. Add cooked matchstick carrots and sliced green onions. Mix well and add a couple of spoonfulls of hoisen sauce (available in the asian section of most stores) Mix until the mixure is well coated. Add a couple of drops of soy sauce and 1 or 2 drops of worcestershire sauce.
Wash lettuce and break off the whole leaves spoon meat mixture into the lettuce leaves and roll like a burrito. Serve immediately.
Muffin in a Minute
Basic Muffin in a Minute
1/4 c. flax meal
1 tsp. baking powder
1/2 tsp. cinnamon (optional)
1 Tbsp. Splenda
1 Tbsp. buttermilk
dash of salt
1 large egg
Mix dry ingredients, add everything else and microwave for 1-1 1/2 minutes.
VARIATIONS:
Chocolate Cake
Also add-
2 Tbsp. unsweetened cocoa
2 Tbsp. applesauce
Pumpkin Muffins
Add
2 Tbsp pumpkin
and add pumpkin pie spice instead of cinnamon
1/4 tsp orange zest

Rye Muffin in a Minute
Muffins in a minute are amazing. For those of us in our first year following gastric bypass, we get no bread. These muffins that are found on the Atkins website are wonderful and super healthy. For a huge variety of these recipes click here

1/4 c. flax meal
1 tsp. baking powder
1 tsp. Splenda
1 Tbsp. rye flour
1 tsp carroway seeds
1 egg
1 Tbsp. buttermilk (I've substituted skim milk and it worked fine)
In a coffee cup, mix together all of the dry ingredients then add egg and milk. Mix together and microwave for 1 to 1 1/2 minutes. Turn upside down and "muffin" will pop out.
I slice the muffin into fourths. I use those slices to make a sandwich using turkey pastrami and a little havarti and then grill it. This is a really good "Non bread" bread.
