Sweet Potato Salad



3 lbs. sweet potato, cooked, peeled and cubed
1 c. chopped sweet red pepper
1/2 c. chopped onion
1 1/4 c. low fat mayonnaise
1 tsp. salt
1/4 tsp pepper
1/8 tsp. hot pepper sauce

In a bowl, combine sweet potato, red pepper and onion. In a separate bowl mix low fat mayo, salt pepper and hot pepper sauce. Pour dressing over sweet potato mixture and mix well. Refrigerate several hours before serving.
